Die Fermentation ist eine der einfachsten und ältesten Methoden, frische Lebensmittel haltbar zu machen. Unter Luftausschluss werden sie mit Hilfe von Mikroorganismen wie Bakterien, Hefen oder Pilzen umgewandelt, wobei sie gewissermaßen vorverdaut werden. Fermentiertes ist für den Körper dadurch leichter bekömmlich und hat zusätzlich viele positive Auswirkungen auf unsere Gesundheit, denn sie stärken durch ihre probiotische Wirkung den Darm und unser Immunsystem. Vor allem aber schmecken sie einfach köstlich – Lebensmittel wie Sauerkraut, Brot, Essig, Käse oder Oliven stellen einen großen Teil unserer Ernährung dar und zeichnen sich durch ihre intensiven Aromen und komplexen Texturen aus. In meinem Projekt setze ich mich mit verschiedenen Fermentationstechniken auseinander und nutze meine Erkenntnisse um Produkte zu entwickeln, die das Fermentieren im Alltag vereinfachen und so auch für jüngere Menschen attraktiver machen.<\/p>\n\n <\/div>\n <\/div>\n\n\n
